			<content:encoded><![CDATA[<p><span style="font-family: comic sans ms,sans-serif; font-size: large;">This is truly a weeknight meal.  The soup came together very quickly.  I added a bit of time purchasing previously frozen shrimp on the shell and cutting my own corn kernels from some farm stand corn.  It was definitely worth it.  This soup is a good starter soup for chowders.  You can take it several different directions by altering the seasoning and proteins included.</span></p>

			<content:encoded><![CDATA[<p><span style="font-family: comic sans ms,sans-serif; font-size: large;">I like to make meals during the week that are both flavorful and somewhat health conscious.  This one is no different.  I buy my rice noodles at various grocery stores.  Be sure to get the wider, flat rice noodles&#8230;not the wispy rice noodles that look like angel hair pasta when cooked.  Another trick for a weeknight meal like this is to buy bags of frozen shrimp.  I only buy raw shrimp. I usually get the shrimp in 2 LB bags at the grocery store and then thaw out just what I need.  With running water and a sieve, you can thaw out a pound of shrimp in less than ten minutes.  Enjoy!</span></p>

			<content:encoded><![CDATA[<p><span style="font-size: medium; font-family: comic sans ms,sans-serif;">Great weeknight meal.  The dish would be just as good without one of the proteins.  The combination of the beans and shrimp are excellent&#8230;but over the top for those of you cost conscious consumers.  If you like, this dish is easily morphed into other flavor combinations.  I think some fresh oregano or fresh rosemary would be wonderful in this dish.  You could move to the Asian side of the world by substituting rice vinegar for the lemon juice, skipping the mustard, and adding some soy and sesame oil.  If you go Asian, why not substitute edamame for the beans! </span></p>

			<content:encoded><![CDATA[<p><span style="font-size: medium;"><span style="font-family: comic sans ms,sans-serif;">When I think of Greek food, I think spanakopita, baklava, olives, oregano, olive oil, etc.  This dish, called Greek-Spiced Baked Shrimp by Andrea Albin, had some unknown Greek combinations.  It wound up being the most savory, flavorful, bright shrimp dish I&#8217;ve had in a long time.  It&#8217;s a tomato-based dish with strong hints of cinnamon, allspice, garlic, and feta.  It&#8217;s sweetened up with some onion.  As the notes in the recipe indicate, you definitely need some crusty bread to soak up the juices in this dish.  Waste nothing!</span></span></p>
