Have you ever had mashed cauliflower?  This is a great substitute for mashed potatoes.  The texture is close, the color is the same.

Have you ever had mashed cauliflower?  This is a great substitute for mashed potatoes.  The texture is close, the color is the same.  Plus, you get a couple of extra vegetable servings behind your belt for the day.  You can make these in many different ways.  My favorite is a puree of cauliflower with boursin cheese.  I can't say that this is a fat free version, but it is absolutely wonderful.  Tonight, we ate the last of the turkey from Christmas and I made mashed cauliflower with sour cream and herbs. 

 

What are your mashed favorites?  Are you willing to try things other than mashed potatoes?
