			<content:encoded><![CDATA[<p>Okay, so I&#8217;ve been obsessing over limoncello all day long.  After finishing my grocery list for the week, I decided to add lemons and vodka to the list.  So, I drove over to the <a href="http://www.picknsave.com" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.picknsave.com?referer=');">Grafton Pick &#8216;n Save</a> (a store that I&#8217;m quite proud of&#8230;and, in the spirit of full disclosure, a store owned by my employer <a href="http://www.roundys.com" target="_blank" onclick="pageTracker._trackPageview('/outgoing/www.roundys.com?referer=');">Roundy&#8217;s</a>).</p>
<p>A few hours later, there&#8217;s a container with the contents of a 1.75 of vodka and the rinds of 8 lemons steeping away.  8 bare lemons and what to do???  I haven&#8217;t made anything sweet in a while.  I think that I&#8217;m going to make homemade lemon curd.  The rest of the lemon juice is now in the freezer for future use.</p>

			<content:encoded><![CDATA[<p>At home this morning, I watched an episode of 30 Minute Meals on Food Network.  Her episode included a great dessert that included Limoncello, this sweet, lemony liqueur.  It reminded me that I had made Limoncello at home and really enjoyed it.  In fact, it disappeared so fast, I didn&#8217;t have time to share with friends!!!  I&#8217;ve decided to look at making another batch (and saving some for friends).  I found a nice recipe online at the epicurious.com web site.  This is a reader&#8217;s recipe, but fits the bill.</p>

<p>Try this recipe and store the outcome in your freezer.  This makes for a great after dinner drink and is great for use in recipes too.  I&#8217;ve included a link to Rachel Ray&#8217;s dessert recipe that aired today on Food Network.</p>
