Quick Chicken Curry

The Cooking Light Magazine team has been putting together its “The Enlightened Cook” segment for some time now.  I find that these dishes can be quite easy to make.  Sometimes, they present a really great meal.  This sauteed chicken dish is one of those great dishes.  I served mine with long-grain Basmati rice.

Spice-Rubbed Pork Chops

This quick dish was absolutely wonderful.  The spice-rub forms a great crust on the top of your pork chop.  The warming flavors of coriander and cumin paired really well with the garlicky sweet potatoes and lemon-scented green beans.  I followed all of the side suggestions for this recipe.
