			<content:encoded><![CDATA[<p><span style="font-family: comic sans ms,cursive;"><span style="font-size: 16px;">Well, we&#39;re nearing the end of the line for Christmas.&nbsp; I might get all but one of the cookies on my list done.&nbsp; I don&#39;t think that I&#39;ll have the time or patience for the linzer cookies.&nbsp; I&#39;m so sad because I&#39;ve always wanted to make them.&nbsp; Oh well, that&#39;s why I pick so many&#8230;.some get placed on the side of the road.&nbsp; As for what I&#39;ve got left, I&#39;m going to try to make some pistachio torrone tonight.&nbsp; The Sicilian fig cookies will be made after dinner tonight. </span></span></p>

<p>	1. Beat butter until fluffy in medium bowl; beat in sugar and vanilla.&nbsp; Mix<br />
	in flour.&nbsp; Refrigerate, covered, until dough is firm enough to shape, about<br />
	2 hours.</p>
<p>	2. Shape dough into 1 1/2 inch balls; place on ungreased cookie sheets. <br />
	Bake at 350 degrees until beginning to brown at the edges, about 10 minutes.<br />
	Let cool 10 minutes.</p>
<p>	3. Roll warm cookies in powdered sugar; cool on wire racks.</span></span></span></p>

	1 1/2 Tbs light corn syrup<br />
	1 1/2 Tbs water<br />
	1/2 tsp pure peppermint extract<br />
	1 Tbs vegetable shortening (preferably trans-fat-free)<br />
	10 oz 70%-cacao bittersweet chocolate, coarsely chopped</span></span></span></p>

Roll out between sheets of parchment paper on a large baking sheet into a 7- to 8-inch round (less than 1/4 inch thick). <p>	1. Melt three fourths of chocolate in a metal bowl set over a saucepan of barely simmering water. Remove bowl from pan and add remaining chocolate, stirring until smooth. Cool until thermometer inserted at least 1/2 inch into chocolate registers 80&deg;F.</span></p>

Coat remaining rounds, rewarming chocolate to 88 to 91&deg;F as necessary. Let patties stand until chocolate is set, about 1 hour.</span></span></span><span style="font-size: 16px;"><span style="color: rgb(0, 100, 0);"><br />
