			<content:encoded><![CDATA[<p><span style="font-size: large;"><span style="font-family: comic sans ms,sans-serif;">Tonight is the first weeknight after daylight savings time began.  It was nice coming home to the sun beating into the house.  It reminded me that I don&#8217;t have to work from dusk to dawn all year long!  For dinner, I pulled out the other half of a homemade dinner I made several weeks ago.  Today, it&#8217;s very easy to buy frozen ravioli from the store.  Our company produces it&#8217;s own brand of ravioli&#8230;offering cheese filled and meat filled versions.  Why not make your own?  Have you made homemade pasta?  If so, why not make pasta, fill the pasta, and freeze it for future use?  I made 20 2inx2in ravioli squares.  5 will feed someone quite well.  That left us with two meals. </span></span></p>

			<content:encoded><![CDATA[<p>As I step down off of my butternut squash soapbox, I&#8217;ll share my experience this evening.  The butternut squash ravioli with cider broth created quite a bit of extra filling for just two people.  Tonight, we thawed out one of the extra containers and made up some ravioli.  Sending Dale outside before  a downpour hit, we brought in about 20 leaves of fresh sage.  Browned up some butter, fried the sage in the butter, and then swam the boiled ravioli in the pan with a few ladles of the cooking liquid.  Absolutely delicious.</p>
<p>On a side note, deeply saddened about losing Gourmet magazine.  I&#8217;ve subscribed to Gourmet and Cooking Light for years now.  Not sure where I&#8217;ll go from here.  Maybe switch to Bon Appetit.  Anyone have thoughts on the &#8220;other&#8221; magazine?  Would love to hear from you!</p>

<p>I&#8217;ve long been a fan of butternut squash.  However, I really didn&#8217;t know much about the vegetable before I started this post.  I wanted to be a bit more knowledgeable before speaking to it.  This yellow skinned, orange fleshed squash comes from the area around Mexico and Guatemala.</p>

<h3><span style="color: #ff0000;">Good flavor pairings:</span> Sage, maple, cinnamon, ginger, mushrooms, cheddar cheese, blue cheeses.</h3>
<p>There are various methods of preparing butternut squash.  The most common is roasting.  By roasting this squash, a very sweet, rich flavor is developed.  I decided to embark on a butternut squash recipe marathon.  To start, I made Butternut Squash Ravioli in Cider Broth; a very simple, tasty dish.  I next made Penne with Roasted Butternut Squash.  This dish added some complexity with the addition of smoked ham.  Later this week, we&#8217;ll have some more ravioli&#8230;but this time with Emeril&#8217;s sage and brown butter sauce (below).</p>
<p>My favorite butternut squash preparation is what I like to call &#8220;Fall Mock Mac &amp; Cheese.&#8221;  I roast a whole butternut squash until sweet and soft.  I then puree it in a blender with skim milk, chicken broth, salt, pepper, and nutmeg.  The mixture should be fairly thin&#8230;definitely thinner than your average pureed squash soup.  I then make homemade spaetzle.  After crisping up the spaetzle a bit, I pour in several ladles of the squash mixture until it coats the spaetzle.  Delicious!  With one whole squash, you can have numerous Mock Mac meals.  I usually freeze half the mixture for future meals.</p>
