Recipe: Lemon Risotto with Peas, Tarragon, and Leeks

Sometimes you feel like mixing your seasons up. This is a very Spring-like risotto. I can imagine how great this will be with fresh English peas from the garden next year. Hopefully, the tarragon in the herb garden will be up by then and I can find some nice tender leeks in the store.

Recipe: Chicken with Lemon-Leek Linguine

This dish is a great weeknight meal. Pounding the chicken creates a much wider surface for the saute step, reducing cooking time significantly. I would recommend adding a bit more chicken broth and juice. If you want a bit more salty-tang, add some capers. This is basically a twist on chicken piccata.
