Recipe: Lemon Risotto with Peas, Tarragon, and Leeks

Sometimes you feel like mixing your seasons up. This is a very Spring-like risotto. I can imagine how great this will be with fresh English peas from the garden next year. Hopefully, the tarragon in the herb garden will be up by then and I can find some nice tender leeks in the store.

Recipe: Cumin-Spiced Chickpeas and Carrots on Couscous

I was intrigued by this recipe. My first reaction was that there was a bit too much starch in the recipe. Couscous AND chickpeas? The combination turned out to be wonderful. My only suggestion would be to make sure that you have more liquid than the recipe suggested. The amount of couscous created soaks

Bacon-Corn Chowder with Shrimp

This is truly a weeknight meal.  The soup came together very quickly.  I added a bit of time purchasing previously frozen shrimp on the shell and cutting my own corn kernels from some farm stand corn.  It was definitely worth it.  This soup is a good starter soup for chowders.  You can take it

Recipe: Stir-Fried Rice Noodles with Beef and Spinach

Everyone needs a quick pick-me-up meal for a weeknight.  This is definitely one of those.  The ginger, garlic, and Sriracha sauce brighten up this dish.  The steak and shiitake mushrooms are a wonderful combination.  I bought twice as much meat as needed.  The remaining beef is sitting in my freezer, pre-sliced and waiting for

Recipe: Butter Chicken

Don’t buy a packet version of this dish.  YOU can make it.  I promise you!  The only thing missing in this recipe is the naan bread.  Though naan is very difficult to make authentically in your home kitchen, there are several great recipe sources for do-it-yourself versions.
