Sometimes you feel like mixing your seasons up. This is a very Spring-like risotto. I can imagine how great this will be with fresh English peas from the garden next year. Hopefully, the tarragon in the herb garden will be up by then and I can find some nice tender leeks in the store. That all said, this turned out to be a wonderful weeknight meal. The vibrant punch lemon gives to the end of a dish made this one feel almost light. I highly encourage you to use fresh tarragon. Though not an herb everyone in the house adores, it really pairs well with the vegetables in this dish.
