The other day, I bought some Shiitake mushrooms from the downtown Metro Market. Their 8 foot wall of mushrooms was like a beacon to me and I took the opportunity to grab some very nice looking Shiitakes. This morning, I looked in the refrigerator and saw those mushrooms. I could wait no longer and decided upon an omelet.
I removed the stems and sliced the tops into thin slivers. Heating up a tablespoon of butter in a pan, I sauteed them until they gave up their water and started to turn golden. While sauteing, I cracked four eggs and whisked them until they, too, were golden. Add the eggs to the hot pan and immediately turn the heat down to medium. I sprinkled the mixture with salt, pepper, and some dried tarragon leaves. Once the mixture solidified, I added a few teaspoons of grated Parmesan and folded over. What a great start to this lazy Sunday!
