The Cooking Light Magazine team has been putting together its “The Enlightened Cook” segment for some time now. I find that these dishes can be quite easy to make. Sometimes, they present a really great meal. This sauteed chicken dish is one of those great dishes. I served mine with long-grain Basmati rice.
For curry powder, I recommend Balti Curry Powder from Penzey’s. It’s a great, spicy, smoky curry that made a great statement in this dish. If you don’t have a Penzey’s in your town, you can order online.
