I’ll be making tandoori chicken tonight. Well, I’ll be making as close a facsimile as I can not having a tandoori oven and not desiring to follow the convoluted way Christopher Kimball’s team set out to make their version. (Don’t get me wrong…I absolutely adore Cook’s Country and America’s Test Kitchen. I just don’t want to go through all the fuss on a Sunday evening.) I stopped at three different stores today to find Vindaloo paste. The recipe that I’m using is one that basically dumps some Vindaloo and yogurt together and then bakes the chicken off at an extremely high temperature. With one last option available, I drove down to the Indian Grocery and Spice store in Wauwatosa, Wisconsin this afternoon. What a wonderful place. They had absolutely everything I was looking for…plus had a lot of the Pakistani staples our friends from Washington DC were missing a few weeks ago. Next time they are in town, we’ll be sure to stop by this place!!!
