On Sunday, we ate a really tasty salmon meal for dinner to get us ready for the work week. This was the first full week that we worked in over three weeks. The holidays are now over and we need to get back into the swing of things. The salmon was a welcome return to our home as we hadn’t had much seafood in the house in the last month! I bought a large piece of salmon fillet (skin on) and cut it down into smaller, meal portions, freezing the excess. The citrus sauce was a really nice addition and paired well with some jasmine rice. The sauce had quite a good taste. The only caution that I’ll throw out is the longer the zest stayed in the yogurt, the more powerful the flavor became. I loved the sauce in the 5 to 30 minute range. After that and I felt that it might be too strong for the fish. Where salmon does a great job holding up to bold flavor, this became a bold that salmon couldn’t surpass. I encourage you to try this dish out. Feel free to mix up your citrus too. Tangerine and honey would be a great pair right now!
