It’s not often that I’m on my own for dinner anymore. Several years ago, I’d be alone every Saturday night and could make just about anything I want. Now, it’s few and far between. I’m a bachelor until Thursday night and am taking full advantage of that for food. My other half cannot have a lot of spicy foods. For me, if it doesn’t burn my lips, it’s not spicy enough!
I decided to go for some Mexican. I’m not a big fan of taco seasoning packets. I prefer to know exactly what is going into my food. I made a very spicy mixture using ground beef, onions, garlic, chipotle peppers, ancho chile powder, cayenne pepper, and tomato sauce. I then tried something I’ve never done before. I made my own refried beans. Well…I made my own refried-like beans! I bought dried pinto beans and cooked them with onion, bay leaves, and salt. Once cooked, I mashed the beans and incorporated in chicken stock, some olive oil, and, of course, chipotle peppers. I have to say, the beans turned out wonderful…and no lard or Crisco in my beans!!
I think I may have to have a margarita…This meal has gotten me into the Mexican spirit!!!
