Singapore-Style Noodles

Looking for something festive for Chinese New Year to make?  This past week, I tried this dish and enjoyed it very much.  Can’t say I would have thought bacon goes well in this dish…but it’s smoky flavor goes well with the spices.  The only adjustment that I’ll make going forward with this dish would be to use a rice noodle sizes that would go in a Pad Thai.  A little bit more sauce would be wise if a wider noodle was used.  As always, even better with sriracha sauce!  Note:  This dish has a distinctive curry flavor.
