I have a friend that recently returned from Germany working as a sign language interpreter for several months. She brought back this cute little jar of Kürbiskernpesto. Looking at the picture outside of the jar and seeing “pesto,” I knew it was a pumpkin-related condiment of some sort. After several tries online to translate from German to English, I tried going backwards and figured it out on the first try!
Intrigued with my new find, I want to go online to find out some information about the use of pumpkin seed pesto. Many sites have recipes for fresh versions of the pesto. What I have is clearly cooked. I’ll have to be careful with how I use this I’m-sure-to-be-delicious condiment. It might be too strong for fish. However, I’ve found a good recipe online for a roasted squash recipe that uses this condiment. I think I’ll try it that way. Cut up a butternut squash into pieces that can be skewered. Then, roast squash and spread a little pesto on each roasted piece. I can’t wait!!!
