Dinner...Roasted All Around

Went to the market today looking for some veggies.  With the Thanksgiving meal behind me, I figured that I could use an infusion of real veggies.  I bought zucchini, yellow squash, onion, cauliflower, and asparagus.  I immediately thought…carmelize the bunch in the oven.  I waltzed past the seafood counter hoping for something exciting.  Salmon, cod, orange roughy…dear lord!!!  So, I gave up and bought some tilapia. 

Here's the game plan:

1. Chop the veggies into roughly 1-inch pieces.  Mix with olive oil, salt, pepper, chopped garlic, and balsamic.  I had a fig balsamic that was given to me as a gift.  Tried that and it was great!  Add herbs if you like too.

2. Slice some potatoes very thin and lightly coat with olive oil, salt, and pepper.

3. Salt and pepper the tilapia…and yes, a li'l olive oil. 

 

I brought the oven to 425.  Started up with the veggies  I let them roast for 45 minutes or so.  About 20 minutes before the veggies were done, I dropped in the potatoes.  When the veggies and potatoes were done, I put the tilapia in flipping once. 

 

I'll admit, I probably over did it with the olive oil.  However, it was absolutely delicious.
