Okay, so I’ve been obsessing over limoncello all day long. After finishing my grocery list for the week, I decided to add lemons and vodka to the list. So, I drove over to the Grafton Pick ‘n Save (a store that I’m quite proud of…and, in the spirit of full disclosure, a store owned by my employer Roundy’s).
A few hours later, there’s a container with the contents of a 1.75 of vodka and the rinds of 8 lemons steeping away. 8 bare lemons and what to do??? I haven’t made anything sweet in a while. I think that I’m going to make homemade lemon curd. The rest of the lemon juice is now in the freezer for future use.
More lemon curd and limoncello discussions to follow. ..

I’m always looking for ways to use the leftover lemon juice. What is lemon curd and what would one use it for?

Ben,
Lemon curd is an egg and lemon based spread/sauce. It’s typically made by combining lemon juice, sugar, butter, and warming whipped eggs into the mixture over a double boiler. (Standard custard approach)
I’ve included a recipe from Alton Brown. Lemon Curd Recipe
There are many uses for lemon curd. I make a tart as described in one of my posts. A basic shortbread crust baked off. Spread fruit preserves, usually raspberry, over the crust. Pour the lemon curd, slightly cooled over the top. Chilled for a few hours, this is a nice bright summery dessert. It’s also heavy enough to stand up in the winter. Other uses: Spread over pound cake or a dense lemon cake. Spread onto toast or English muffins.
I hope that helps!
